100% Moscato. Brilliant straw-colored yellow with soft green reflections. A delicate white froth evolves into a very fine and persistent perlage. Its full nose is aromatic, floral and fruity as well as intense and persistent. The taste, pleasantly sweet and fresh due to the low alcohol content and correct acidity.

WEXFORD IRISH CHEDDAR
Cow’s milk picks up a sunny pigment from the lush pastures growing in southeast Ireland’s temperate climes. Buttery and grassy, with sweet and fruity flavors, and kept moist with an ever- so-Irish green wax. Try with the Roussanne or the Sangiovese!
This small-batch blue is delicately smoked over fruit wood to create subtly smoky undertones. Beautifully balanced and softly seductive, this cheese is wonderful by itself and also pairs with an array of wines and is excellent to cook with. Perfect with the Roussanne or the Unchained!
HATCH GREEN CHILI GOUDA
Beemster cow’s milk Gouda gets a peppery kick from Hatch chiles, which vary in heat from mild to fiery. But don’t be scared: Beemster Mild is sweet and creamy, so this cheese ends up perfectly balanced. Great fun with the Vermentino or the Grenache Rose!
P’tit Basque is a 100% pure sheep’s milk cheese produced in France’s Basque region in the Pyrenees Mountains, the region that spans the border between France and Spain. Traditionally, it was handmade by shepherds from left over curds set aside from milking their ewes. Perfect with the Nebbiolo! Super fun with the Trebbiano and Sangiovese!
PECORINO ROMANO D.O.P.
Pecorino Romano is Italy’s oldest cheese, dating back to ancient Roman times. This is a hard pure sheep’s milk cheese, hand-salted, typically aged for one year and tends towards light straw coloring. It is very tasty and slightly piquant. Best match is the Moscato! Great with Unchained and Dolcetto!
